Grilled Tomatoes with Basil, Garlic, and Lemon

This was a wonderful side dish! I loved the sweet grilled tomatoes with the tangy and flavorful drizzle of olive oil, garlic, fresh basil, and lemon juiceāit was a perfect combination of flavors. My son even liked this dish, and he’s not a fan of cooked tomatoes! These delicious grilled tomatoes paired nicely with some juicy steaks, loaded baked potatoes, and a simple salad.
Grilled Tomatoes and Basil, Garlic, and Lemon
Ingredients:
- 1 tbsp olive oil
- 1 clove of garlic
- Juice & zest of half a lemon
- 1 tbsp fresh basil, chopped finely
- 8-10 small tomatoes
- Sea salt and freshly cracked pepper, to taste

How to Make Grilled Tomatoes with Basil, Garlic, and Lemon:
Whisk the olive oil, minced garlic, lemon zest, lemon juice, and fresh basil in a small bowl until well combined.
Heat a grill pan to medium-high heat (or heat a grill over medium-high heat).
Slice the tomatoes in half crosswise, then season with sea salt and freshly cracked pepper to taste.
Place, cut-side down, on the hot grill. Grill until charred, about 2 minutes for small tomatoes and 4 minutes for large tomatoes.
With a metal spatula, flip the tomatoes and grill until the skins blister and begin to char, about 2 to 3 minutes.
Transfer tomatoes to a serving platter and drizzle with the well-whisked basil, garlic, and lemon oil.
Serve tomatoes warm or at room temperature. Enjoy.
