Queso Dip
We’ve had another week of hot weather–ugh, I am ready for fall! I’ve had little desire to cook while it’s been so hot outside so I recently decided to have a Mexican-style smorgasbord dinner. I found an easy recipe for queso dip over at Dinner then Dessert that sounded perfect. We had chips with salsa, guacamole, queso dip, mini shredded beef tacos, and fresh fruit for dinner. We all thought this dip was tasty and I could tell my son especially loved it because he kept going back for more.
How to Make Queso Dip
Heat the butter in a large skillet over medium heat. Add the flour and whisk for 1 minute.
Slowly add the milk while whisking continuously until smooth and creamy, about 3 minutes.
Add the diced tomatoes, green chiles, cheddar cheese, and jack cheese until the mixture is completely combined and smooth (except for the tomatoes & green chiles). Serve immediately.
Side Note: Best when made right before serving.

- 1 can green chiles mild or spicy
- 1 ½ cups sharp cheddar cheese shredded
- 1 ½ cups Monterey Jack cheese shredded

I don’t think I know of a single person who wouldn’t be thrilled to sit down at your table and enjoy that meal. The queso dip looks terrific.
YES! I love Mexican snacks as a dinner idea. Especially if this queso is front and center.
this is the kind of thing i have to deliberately avoid at a party–it’s so addictive! i like that you used real cheese instead of velveeta (not that there’s anything wrong with that…). 🙂
