Roasted Cauliflower with Garlic and Pine Nuts
This roasted cauliflower with garlic and pine nuts was my lunch recently and it was so tasty. I had a big bowl full of perfectly roasted cauliflower with bits of roasted garlic, toasted pine nuts, fresh parsley, and lots of lemon juice and I loved every bite! I was craving something healthy yet filling for lunch so I drizzled the cauliflower and garlic cloves (skin on) with olive oil, and simply seasoned them with salt, pepper, and crushed red pepper flakes, then roasted them until golden brown. I removed the garlic cloves from their skins, sliced them, and sprinkled them on top of the caramelized cauliflower with toasted pine nuts, fresh lemon juice, and parsley. Simple, delicious, healthy & filling.

How to Make Roasted Cauliflower with Garlic and Pine Nuts
Preheat the oven to 400 degrees.
Coat the cauliflower slices with olive oil, sea salt, freshly cracked black pepper, and crushed red pepper flakes, to taste. Gently toss to coat evenly. Spread the cauliflower out over the baking sheet along with the garlic cloves (with the skin still on).
Roast in the oven for 10-12 minutes, or until golden brown. Carefully flip the cauliflower pieces over and continue to roast for another 5-7 minutes, or until golden brown and tender.
Remove from the oven. Take the cloves of garlic off the baking sheet and allow them to cool for a minute before removing the skins. Slice the garlic and sprinkle on top of the cauliflower. Add the toasted pine nuts and fresh parsley. Squeeze fresh lemon juice on top, to taste, and serve immediately. Enjoy.

Simple and very delicious! Roasting definitely brings the best flavour out of the cauliflowers.
