Avocado Cucumber Salad

Creamy avocados and crunchy cucumbers are the stars of this simple and delicious herb avocado cucumber salad with a lime vinaigrette.

I stumbled upon this avocado cucumber salad on Recipe Tin Eats, and since I had all the ingredients, I made it. We all loved the combination of fresh herbs, crunchy cucumbers, creamy avocado chunks, and crisp onions combined with the tart & spicy lime vinaigrette. This delicious avocado cucumber salad is my idea of the perfect summer salad. I served this tasty avocado salad with grilled chicken and a tomato salad.

Avocado Cucumber Salad

Lime Vinaigrette:

  • 2 tbsp fresh lime juice
  • 2 tbsp olive oil
  • Sea salt and freshly cracked pepper, to taste
  • Pinch of crushed red pepper flakes, to taste
  • Pinch of sugar, to taste

Salad:

  • 2 Persian cucumbers, sliced
  • 1 large, firm but ripe avocado, peeled, quartered, and cut into large chunks
  • ¼ red onion, sliced thinly **Soak the slices in ice water for 10 minutes if they are too strong in flavor. Dry on a paper towel. 
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh cilantro, chopped
  • Crushed red pepper flakes, to taste
  • Sea salt and freshly cracked pepper, to taste

How to Make an Avocado Cucumber Salad

Prepare the lime vinaigrette by combining the lime juice, olive oil, sea salt, freshly cracked pepper, crushed red pepper, and sugar in a small jar. Seal with lid and shake well. Set aside to allow flavors time to mingle.

Make the salad by combining the cucumbers, avocado, onion, dill, cilantro, crushed red pepper flakes, sea salt, and freshly cracked pepper to taste together in a bowl.

Serve the salad by pouring the well-shaken lime vinaigrette over the top of the salad and gently tossing with your clean fingers to coat the veggies. Serve and enjoy.
