Easy Romaine Salad with Vinaigrette
This easy romaine salad with vinaigrette is a quick and simple salad of romaine lettuce, tomatoes, bell pepper, cucumber, red onion, pine nuts, and shaved parmesan all tossed in a simple tangy vinaigrette.
This recipe is a clean-out-the-fridge recipe using the bits and pieces of random veggies we had leftover from other meals. I had also planned to use an avocado in this salad but it was sadly brown when I sliced it open–I hate it when that happens! I tossed the ingredients with our favorite salad dressing, Fran’s vinaigrette, and the salad turned out light, flavorful, and tasty.
Easy Romaine Salad with Vinaigrette
Vinaigrette:
- 1/4 cup good olive oil
- 3 tbsp seasoned rice vinegar
- 1 tbsp red wine vinegar
- 1 clove of garlic, minced
- Sea salt and freshly ground black pepper, to taste
- Pinch of sugar
Romaine Salad:
- 4 cups romaine lettuce, chopped
- 3 campari tomatoes, quartered
- 1/2 red bell pepper, chopped
- 1/2 English cucumber, sliced
- 1/4 red onion, sliced **If too strong in flavor, soak the onion slices in ice water for 10 minutes then pat dry with paper towel
- 1 radish, sliced thinly
- 2 tbsp toasted pine nuts
- 1 tbsp dried cranberries
- Parmesan cheese, shaved, to taste
- Freshly cracked black pepper, to taste
How to Make an Easy Romaine Salad with Vinaigrette
Make the vinaigrette by combining the olive oil, seasoned rice vinegar, red wine vinegar, minced garlic, sea salt, freshly cracked black pepper, and sugar, to taste in a small glass jar. Seal with a lid and shake well. Set aside to allow the flavors time to mingle. Side Note: We love a very tangy vinaigrette, if you don’t, add less vinegar.
Make the romaine salad by combining, tomatoes, bell pepper, cucumber, red onion, radish, pine nuts, and dried cranberries together in a large bowl.
Drizzle the salad with some of the well-shaken vinaigrette, to taste; toss to coat the salad evenly.
Top with shaved parmesan and season with freshly cracked black pepper, to taste. Serve immediately and enjoy.

So very fresh, crunchy and healthy!
Looks simple and delicious and we rarely buy anything but romaine. The dressing sounds interesting.
