Scored Potatoes with Garlic Butter
These scored potatoes with garlic butter are crispy, buttery potato halves that are easy to make and pair well with most main entrees.Â

I’ve made a batch of scored sweet potatoes with garlic butter in the past, and we loved them. After watching a viral video about roasted, scored russet potatoes, I decided to try making this recipe for scored potatoes with garlic butter. Scoring the potatoes allows the butter to seep into the potato, making them extra flavorful with a nice crispy top. These tasty scored potatoes paired nicely with Italian flank steak with balsamic roasted tomatoes and a loaded garden salad.Â
Scored Potatoes with Garlic Butter
Ingredients:
- 1 tbsp olive oil
- 1 tbsp butter
- 2 russet potatoes, scrubbed & halved lengthwise
- Sea salt and freshly cracked pepper, to taste
Garlic Butter:
- 2 tbsp butter, melted
- 1 clove of garlic, finely minced
- 1 tsp fresh parsley, finely chopped
Serving (optional):
- Sour cream
- Bacon bits
- Green onions or chives, chopped

How to Make Scored Potatoes with Garlic Butter
Preheat the oven to 400 degrees. Brush one tablespoon of olive oil evenly on a small baking sheet.
Cut each potato in half lengthwise with a sharp knife, then use the tip of a knife to score the cut sides in a ¼-inch crosshatch pattern. Rub both sides of potato halves with the butter and season with sea salt and freshly cracked pepper, to taste.
Arrange the potato halves, flesh side down, on the prepared baking sheet and bake for 45 minutes, or until tender and crispy.

Meanwhile, make the garlic butter by combining the melted butter, garlic, and parsley in a small dish; keep warm.
Carefully flip the potato halves over with a spatula and brush the garlic butter evenly over each potato half.
Return to the oven for 5-7 minutes.
Remove from the oven and serve as is, or topped with sour cream, bacon bits, and green onions or chives. Enjoy.
