Green Beans with Feta and Dill

I found this green beans with feta and dill recipe on Cooking on the Side. We all enjoyed these green beans, and both of my kids asked for seconds! I loved the dill flavor and thought it paired nicely with some razor clams and garlic rice.
Green Beans with Feta and Dill
Ingredients:
- 2 tbsp red wine vinegar
- 1 tbsp shallot, minced
- 1 clove of garlic, minced
- 3 tbsp olive oil
- Sea salt and freshly cracked black pepper, to taste
- 1 lb. fresh green beans, ends trimmed
- ¼ small red onion, sliced thinly  ***Soak the slices in ice water for 10 minutes, then dry on a towel, if they are too strongly flavored.
- Feta cheese, crumbled
- 2 tbsp fresh dill, chopped
How to Make Green Beans with Feta and Dill
In a small glass jar, add the chopped shallot, minced garlic, red wine vinegar, olive oil, sea salt, and freshly cracked pepper, to taste; whisk well, and set aside to let the flavors mingle.
Place the green beans in a large pot of well-salted boiling water for 3-4 minutes. Side Note: I like mine tender but still crisp.
Drain the water and immediately plunge the green beans into a bowl of ice water to stop them from cooking and preserve their bright green color. Drain and place on a towel to dry thoroughly.
Place the dried green beans in a serving dish.
Add the sliced onion and fresh dill.
Drizzle on the well-whisked salad dressing to taste. Toss until evenly coated.
Sprinkle the top with feta cheese.
Serve and enjoy.

I usually find that it is hard to improve on simply cooking garden fresh vegetables and serving with butter, salt and pepper. This, however, was outstanding! I am able to buy amazing feta at a local Greek market and along with fresh beans – this was !!!
I really like green beans with feta and dill, but I’ve never made them myself. I have to try your recipe 🙂
