Green Beans with Feta and Dill

Green Beans with Feta and Dill

I found this green beans with feta and dill recipe on Cooking on the Side. We all enjoyed these green beans and both of my kids asked for seconds! I loved the dill flavor and thought it paired nicely with the razor clams and garlic rice.

How to Make Green Beans with Feta and Dill

In a small glass jar add the chopped shallot, minced garlic, red wine vinegar, olive oil, sea salt, and freshly cracked pepper, to taste; whisk well, and set aside to let the flavors mingle.

Place in a large pot of boiling water for 3-4 minutes, I like mine tender but still crisp.

Drain and place in ice-cold water to stop them cooking and to preserve the bright green. Drain and place in a bowl.

Add the sliced onion, fresh dill, and salad dressing to taste. Toss until evenly coated.

Place in a serving dish and sprinkle the top with feta cheese. Serve and enjoy.

  1. I usually find that it is hard to improve on simply cooking garden fresh vegetables and serving with butter, salt and pepper. This, however, was outstanding! I am able to buy amazing feta at a local Greek market and along with fresh beans – this was !!!
