Spicy Peanut Asian Noodle Salad

I really enjoy a spicy peanut vinaigrette I recently picked up from Trader Joe’s–it’s super flavorful. I had a bit of the dressing left in the bottle, so I decided to make my Asian Noodle Salad using the spicy peanut vinaigrette instead of my usual vinaigrette. It turned out excellent! It was spicy and so delicious with the crunchy nuts, veggies, and soft noodles. My entire family really, really loved this salad, and it paired nicely with sweet chili soy pork chops and avocado cucumber salad.
Spicy Peanut Asian Noodle Salad
Ingredients:
- ½ lb. spaghetti noodles, cooked per instructions
- 1 cup of shredded carrots
- ½ red bell pepper, julienned
- ½ yellow bell pepper, julienned
- 2 green onions, diced finely
- 1 handful of cilantro leaves, chopped
- 1 handful of basil leaves, chopped
- ½ cup of toasted peanuts
- Spicy Asian Peanut Dressing, to taste

How to Make a Spicy Peanut Asian Noodle Salad:
Cook the spaghetti to al dente in a large pot of well-salted water, according to the package instructions. Drain and rinse with cold water.
Meanwhile, prep the vegetables.
To serve, toss the cooled noodles with the spicy peanut dressing, then add the vegetables and peanuts.
Gently mix the salad until well combined and serve. Enjoy.
