Black Beans with Tomato, Onion, Cilantro, and Garlic

We were having some Mexican food for dinner, and I needed a quick and easy side dish recipe to pair with some citrus-marinated pork tacos and Mexican rice. This easy Mexican side dish recipe, consisting of black beans with tomato, onion, cilantro, and garlic, was on the table in minutes and tasted fantastic with the rest of the meal.

Black Beans with Tomato, Onion, Cilantro, and Garlic

Ingredients:

  • 1 (14-oz) can of black beans, rinsed and drained
  • 2 tbsp water
  • 1 tbsp yellow onion, diced finely
  • 1 tbsp grape tomatoes, diced
  • 1 tbsp fresh cilantro, diced
  • 1 clove of garlic, diced
  • 1 small jalapeño, seeded and diced finely
  • Pinch of cumin
  • Pinch of dried oregano
  • Sea salt and freshly cracked pepper, to taste

How to Make Black Beans with Tomato, Onion, Cilantro, and Garlic

Place the rinsed and drained black beans in a small saucepan over low heat.

Add the water, onion, tomatoes, cilantro, garlic, jalapeño, cumin, oregano, sea salt, and freshly cracked pepper to taste.

Cook for 10 minutes, or until the beans are hot. Taste, re-season if needed, then serve immediately. Enjoy.
