Fresh Herb and Garlic Pasta with Shrimp

I wasn’t in the mood to cook a big dinner, so I grabbed a few things from the refrigerator and threw them together to make this fresh herb and garlic pasta with shrimp recipe. We all loved this dish, and it paired nicely with my house salad, crusty bread, and the asparagus with lemon and feta cheese. I love a meal that comes together in minutes, tastes fantastic, and everyone likes it. Simple food is my favorite!
Fresh Herb and Garlic Pasta with Shrimp
Ingredients:
- ½ lb spaghetti cooked per instructions, reserving ½ cup of cooking liquid
- 3 tbsp olive oil, divided
- ½ lb raw shrimp, deveined and tails removed
- Sea salt and freshly cracked pepper to taste
- 7-8 cloves of garlic, minced
- Dash of crushed red pepper flakes, or more if desired
- ¼ cup of fresh basil, chopped
- ¼ cup of fresh parsley, chopped
- Finely grated Parmesan, to taste
How to Make Fresh Herb and Garlic Pasta with Shrimp
Prepare the spaghetti in a large pot of well-salted water according to the package instructions. Drain, reserving ¾ cup of cooking liquid.
Meanwhile, heat 1 tablespoon of olive oil in a large skillet over medium heat.
Season the shrimp with sea salt and freshly cracked pepper, to taste.
Cook the shrimp by placing them in the skillet and cooking for 1-2 minutes. Flip over and cook for 1 minute, or until they are cooked through. Remove the shrimp from the skillet.
Add the remaining olive oil to the same skillet, then add the minced garlic and crushed red pepper flakes, cook, stirring constantly, for 1 minute.
Finish by adding the cooked noodles and most of the reserved cooking liquid to the skillet along with the shrimp. Season with sea salt and freshly cracked pepper, to taste, then add the fresh basil and parsley.
Mix evenly, then serve with grated Parmesan. Enjoy.

Great recipe! I was looking for one that uses fresh as I have a ton right now. I will give it a try today with my own tweaks!
I usually have a jar in the fridge of garlic I slowly sautéed in a lot of olive oil and mashed a bit with some seasonings, so I like to use that garlic infused oil.
