Delicata Squash with Brown Sugar

Delicata is my new favorite squash, and I’m disappointed it took me so long to try it! This delicata squash with brown sugar recipe was really simple to prepare, and it turned out so delicious and flavorful. We all loved this easy squash recipe and thought it paired nicely with herb pork chops with caramelized shallots, a harvest salad, and Duchess baked potatoes.

Delicata Squash with Brown Sugar

Ingredients:

  • 2 delicata squash, cut in half lengthwise, then scoop out the seeds
  • 4 tbsp butter
  • Sea salt and freshly cracked pepper, to taste
  • 2 tbsp brown sugar

How to Make Delicata Squash with Brown Sugar

Preheat the oven to 375 degrees. Add ¼ inch of water to a large 9×13-inch baking dish.

Cut the squash in half lengthwise, then clean out the seeds with a spoon.

Rub the butter equally into each squash half. Season with a touch of sea salt and freshly cracked pepper, then sprinkle each half equally with the brown sugar.

Place the squash in the prepared baking dish, then cover with foil.

Place the pan into the oven and bake for 30 minutes, or until tender.

Remove the foil, then turn the oven to broil and cook for a few minutes or until the sugar starts to caramelize. Watch it carefully so it doesn’t burn.

Remove from the oven and serve immediately. Enjoy.

  1. I do not know delicata at all but I have a squash ready to be eaten here and I will try that recipe with it, sounds good to to me. Thanks. Have a good day. Diane

  2. Delicata is one of my favorites too. I usually cook it in the microwave: smear with Smart Balance and sprinkle with seasoned salt or Mrs. Dash no salt seasoning. I use a square pyrex pan with a little water in the bottom and a plate balanced over the top – saves on plastic wrap which I do not like to put in the microwave.
