Roasted Green Beans and Tomatoes Topped with Feta

Roasted Green Beans and Tomatoes Topped with Feta

I find myself wanting to roast veggies before summer hits and it gets too hot. To me, roasting is the best way to bring out the flavors in almost any vegetable. I love the texture and sweetness of roasted vegetables. Tomatoes are one of my very favorites roasted and so are green beans so I decided to roast them together then topped them with some creamy feta cheese. The combination is always delicious and never lasts long on our table. Quick, simple, healthy, and delicious.

Place into the oven for 10 minutes. Remove from the oven then add the minced garlic and gently toss to coat the veggies in the garlic. Return to the oven and cook for 2 minutes. Remove from the oven and place onto a serving plate. Sprinkle the top with feta cheese and serve. Enjoy.
