Roasted Green Beans and Tomatoes Topped with Feta

I made these roasted green beans and tomatoes topped with feta because I find myself wanting to roast veggies before summer hits and it gets too hot. To me, roasting is the best way to bring out the flavors in almost any vegetable and I love the texture and sweetness of roasted vegetables. Tomatoes are one of my very favorites roasted and so are green beans so I decided to roast them together then topped them with some creamy feta cheese. Quick, simple, healthy, and delicious.

How to Make Roasted Green Beans and Tomatoes Topped with Feta

Preheat the oven to 400 degrees. Line a baking sheet with tinfoil (for easier clean up) then coat it with cooking spray.

Spread the trimmed green beans and tomatoes on the baking sheet then drizzle with olive oil and season generously with sea salt and freshly cracked pepper, to taste. Toss to coat evenly.

Place into the oven for 10 minutes. Remove from the oven then add the minced garlic and gently toss to coat the veggies in the garlic. Return to the oven and cook for 2 minutes. Remove from the oven and place onto a serving plate. Sprinkle the top with feta cheese and serve. Enjoy.

  • ½ lb green beans ends trimmed
  • 1 cup of large grape tomatoes
  • 1 tbsp olive oil
  • Sea salt and freshly cracked pepper to taste
  • 1 clove of garlic minced
  • Feta cheese to taste

Instructions

  • Preheat the oven to 400 degrees.
  • Spread the trimmed green beans and tomatoes on the baking sheet then drizzle with olive oil and season generously with sea salt and freshly cracked pepper, to taste. Toss to coat evenly.
  • Place into the oven for 10 minutes. Remove from the oven then add the minced garlic and gently toss to coat the veggies in the garlic.
  • Return to the oven and cook for 2 minutes.
  • Remove from the oven and place onto a serving plate. Sprinkle the top with feta cheese and serve. Enjoy.
