Roasted Green Beans and Tomatoes Topped with Feta

I made these roasted green beans and tomatoes topped with feta because I want to roast veggies before summer hits and it gets too hot. To me, roasting is the best way to bring out the flavors in almost any vegetable and I love the texture and sweetness of roasted vegetables. This green beans, and tomatoes topped with feta recipe was quick, simple, healthy, and delicious.

Green Beans and Tomatoes Topped with Feta

Ingredients:

  • ½ lb green beans, ends trimmed
  • 1 cup of large grape tomatoes
  • 1 tbsp olive oil
  • Sea salt and freshly cracked pepper, to taste
  • 1 clove of garlic, minced
  • Feta cheese, to taste

How to Make Roasted Green Beans and Tomatoes Topped with Feta

Preheat the oven to 400 degrees. Line a baking sheet with tinfoil (for easier cleanup) then coat it with cooking spray.

Spread the trimmed green beans and tomatoes on the baking sheet, then drizzle with olive oil and season generously with sea salt and freshly cracked pepper, to taste. Toss to coat evenly.

Place into the oven for 10 minutes. Remove from the oven then add the minced garlic and gently toss to coat the veggies in the garlic. Return to the oven and cook for 2 minutes. Remove from the oven and place onto a serving plate. Sprinkle the top with feta cheese and serve. Enjoy.

Instructions

  • Preheat the oven to 400 degrees.
