Spicy Asian Cucumber and Tomato Salad with Cilantro

I was serving some Asian shrimp tacos for dinner and wanted a fresh and healthy Asian side dish with a kick. Luckily, I found this spicy Asian cucumber and tomato salad with cilantro recipe on Food and Wine that I could adapt a bit to suit our tastes. This Asian cucumber salad reco[e was flavorful, crunchy, sweet, and spicy, and we all loved it. My son thought it was spicy but ate every bite, and I loved the crisp cucumbers with a kick and felt it paired nicely with the tacos. My daughter and husband loved this salad and fought over the last of it.

Spicy Asian Cucumber and Tomato Salad with Cilantro

Vinaigrette:

  • 4 tbsp sweetened rice vinegar
  • 1 tbsp white sugar
  • 1 tsp toasted sesame oil
  • 1 clove garlic, minced
  • ¼ tsp ginger, minced
  • Sea salt and freshly ground black pepper, to taste

Salad:

  • 1 long English cucumber, sliced thinly
  • 4-5 grape tomatoes, sliced thinly
  • ¼ cup cilantro leaves
  • 1 serrano chile, sliced thinly

How to Make a Spicy Asian Cucumber and Tomato Salad with Cilantro

Combine the vinegar, sugar, sesame oil, garlic, ginger, sea salt, and freshly cracked pepper in a bowl. Whisk well.

Add the cucumber, grape tomato slices, cilantro, and serrano chile slices into the bowl. Gently toss to coat evenly.

Let the salad sit for 15-20 minutes to allow flavors to mingle, tossing every once in a while. Enjoy.

  2. My MIL has a huge garden, and it’s bursting with cucumbers and Sweet 100 and yellow pear tomatoes (as well as yellow squash, zucchini, and peppers). This will be a delicious recipe and I’m sure it’s amazing with the Asian tacos!
