White Bean Ragout
I wanted a simple and healthy side dish to pair with the Grilled Chimichurri Chicken Skewers. I saw this white bean ragout recipe on Once Upon a Chef that looked easy, delicious, and different than what I normally serve as a side dish. We all really loved this bean ragout—the flavors were delicious, and sopping up the juices with warm bread was amazing.
White Bean Ragout
Ingredients
- 1 tbsp olive oil
- ½ sweet yellow onion diced
- 1 clove of garlic minced
- 1 can white cannellini beans rinsed & drained
- ¾ cup chicken or vegetable broth
- Handful of cherry tomatoes halved
- ¾ tsp tomato paste
- ¾ tsp white balsamic vinegar
- Sea salt and freshly cracked pepper to taste
- 2-3 basil leaves chiffonade (or chopped)
How to Make White Bean Ragout
Heat the oil in a skillet over medium heat. Add the onion and cook, stirring occasionally, for 6-7 minutes.
Add the minced garlic and cook, stirring constantly, for 1 minute.
Add the rinsed and drained white cannellini beans, chicken broth, cherry tomato halves, tomato paste, and white balsamic vinegar. Gently stir until well combined. Simmer for 10 minutes; taste and season with sea salt and freshly cracked pepper, to taste.
Add fresh basil then pour into a serving bowl and serve. Enjoy.

The bean ragout sounds delicious! I can see it also as a great main dish with rice and a salad.
