Tomato and Feta Galette
I have always made sweet galettes using fresh fruit but this time I decided to switch it up and make a savory galette using some cherry tomatoes I got at the farmer’s market over the weekend. This tomato and feta galette couldn’t be easier to make. I used pre-made pie crust because I had some in the fridge along with feta cheese, a small shallot, sliced garlic, and some fresh basil. It smelled incredible while it baked and it disappeared minutes after taking it out of the oven. My entire family agreed that the tomato and feta galette was delicious. I can’t wait to make more savory galettes in the future.
How to Make a Tomato and Feta Galette
Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
Roll the pre-made pie crust out on the parchment paper. Brush the pie crust with olive oil then season with sea salt and freshly cracked pepper, to taste. Sprinkle the shallot, sliced garlic, and some of the feta cheese in the center of the pie crust leaving about a 2-inch border.
Layer the cherry tomato halves over the cheese, shallot, and garlic. Gently fold and pleat the dough over the tomatoes. Brush the edges of the folded pie crust with a bit of olive oil, if desired.
Place into the oven and bake for 40-45 minutes, or until the crust is golden brown. Remove from the oven and sprinkle with the remaining feta cheese and top with fresh basil leaves. Slice and serve immediately. Enjoy.

- 1 pre-made pie crust

- ½ cup feta cheese divided
- Handful of cherry tomatoes halved
- Fresh basil leaves
