Quick Pickled Asian Vegetables

I recently had some pork belly on steamed bao with quick pickled Asian vegetables and I absolutely loved it. I decided to try and recreate the meal on my own. First, I needed to make some quick pickled Asian vegetables using sliced carrots, cucumber, red onion, and jalapeno using seasoned rice vinegar, a bit of water, and some salt. The pickled veggies tasted amazing with the pork belly and gave the sandwich the zing it needed.

How to Make Quick Pickled Asian Vegetables

Cut the vegetables then place them into a pint-sized glass jar.

Quick Pickled Asian Vegetables

In a glass bowl, heat the seasoned rice vinegar, water, and salt in the microwave for 30 seconds. Allow it to sit for a minute or two then stir until the salt is dissolved.

Pour the liquid over the veggies then allow it to cool. Seal tightly with a lid and place in the refrigerator for at least a few hours before serving. Enjoy.

Ingredients

  • 2 carrots peeled & cut into matchsticks
  • ½ seedless cucumber peeled & cut into matchsticks
  • ¼ red onion thinly sliced
  • ½ jalapeno sliced into matchsticks
  • 1 clove of garlic thinly sliced
  • ½ cup seasoned rice vinegar
  • ¼ cup of water
  • 1 tsp salt

Instructions

  • Cut the vegetables then place them into a pint-sized glass jar.

    Sounds wonderful, but can one use another kind of chili pepper instead of a jalapeño which is not Asian, like a Thai bird’s eye chili pepper?

      Absolutely! My store only had teeny tiny Thai chilies and I wanted the chili matchsticks to be similar size to the cucumber and carrot matchsticks which is why I went with the jalapeno.

      Sorry, I’m not sure if they are Keto low carb. The seasoned rice vinegar does have some sugar in it.

    2. As long as there is no sugar in the rice vinegar there will be some. But even with the conifer there is very little auger if you will it a little.

      They always get eaten up so quickly in my house so I’m not sure how long they would actually last. Since they are a quick pickle, they wouldn’t last for months. I hope this helps.
