Skillet Baked Eggs with Cream and Parmesan
I had a big craving for baked eggs recently so I decided to splurge and make some skillet baked eggs with cream and parmesan served with buttery toast soldiers. This breakfast is quite decadent due to the butter, cream, parmesan, and toast but it’s oh-so worth it and I savored every bite. These company-worthy skillet eggs take less than 10 minutes to make and use only a few ingredients I always have on hand.
Skillet Baked Eggs with Cream and Parmesan
Ingredients:
- 2 tsp butter
- 2 eggs
- 1 tbsp heavy cream
- 1 tbsp Parmesan, grated
- 1 tsp shallot, minced finely
- Fresh thyme leaves, to taste
- Sea salt and freshly cracked pepper, to taste
- Fresh parsley, chopped, to taste
How to Make Skillet Baked Eggs with Cream and Parmesan
Preheat the oven to 400 degrees.
Heat a small cast iron skillet over medium heat then add the butter. Remove from the heat as soon as the butter is melted.
Crack the eggs into the skillet then drizzle the top of them with the heavy cream. Next, sprinkle the minced parmesan, shallot, and thyme leaves on top of the eggs. Season with sea salt and freshly cracked pepper, to taste.
Place into the oven and bake for 4-6 minutes, or until the whites are just set but the yolks are still soft. Remove from the oven and sprinkle with fresh parsley. Serve immediately with buttered toast, if desired. Enjoy.

This reminds me of one of my favorite brunch meals from a local French restaurant. It is really indulgent but oh so good!
