Loaded Baked Potato Bites
These incredibly tasty baked potato bites are loaded up with sharp cheddar cheese, sour cream, crispy bacon bits, and chives. These little beauties make a great appetizer or party snack and they are the perfect appetizer for St. Patrick’s Day or the Super Bowl. You simply toss the potato slices in melted butter then season with salt & pepper before baking them until golden brown and tender. Melt some cheese on top then add the toppings and you suddenly have one delicious finger food. My kids devoured this tray in minutes and they both loved these little loaded baked potato bites.
How to Make Loaded Baked Potato Bites
Preheat the oven to 400 degrees. Coat a baking sheet with cooking spray or line it with parchment paper.
Toss the potato slices in the melted butter until evenly coated. Season well with sea salt and freshly cracked pepper. to taste. Arrange the potato slices in a single layer on the sheet pan.
Bake potato slices for 15 minutes then flip them over and bake for another 13-15 minutes, or until golden brown and tender.
Top the potato rounds with shredded sharp cheddar cheese and return to the oven for 2-3 minutes, or until cheese is melted and bubbling.
Add a dollop of sour cream, bacon bits, and fresh chives to the top of each potato round. Serve immediately. Enjoy.

How thick do you slice the potato? The recipe gives no clue. From the photo it looks like they’re about a half-inch thick, but it’s hard to tell.
