Cucumber Salad
This is such a simple and satisfying cucumber salad recipe to make. I love the crunchiness of the cucumbers and onions along with the juicy tomatoes. I served this salad with barbecued pulled pork sandwiches and they went perfectly together. You can use whatever vinegar you have on hand but I use rice vinegar because I love the strong flavor.
Cucumber Salad:
Ingredients:
- 1 large cucumber
- 1/4 sweet yellow onion, sliced thinly
- 1 handful of grape tomatoes, sliced in half
- 1/4 cup of rice vinegar (or whatever flavor you have)
- 2 tbsp of water
- 2 tsp white sugar
How to Make a Cucumber Salad
Peel the cucumber then cut in half lengthwise. Take a spoon and scrape the seeds out of each half.
Cut into slightly thick slices. Combine all ingredients into a bowl and mix thoroughly. Let the salad marinate (stirring occasionally) for at least 1 hour (I usually marinate for at least 3 hours).
with the exception of the tomatoes (which sound like a great addition) this has been a family favorite for years.
