Cucumber Salad

This is such a simple and satisfying cucumber salad recipe. I love the combination of flavors and textures–the crunchiness of the cucumbers and onions, along with the juicy tomatoes, and the tangy vinegar. I served this salad with barbecued pulled pork sandwiches, macaroni salad, and sweet potato chips, and it was a delicious meal that we all enjoyed.

Cucumber Salad

Ingredients:

  • ÂĽ cup of seasoned rice vinegar (or whatever flavor you have)
  • 2 tbsp of water
  • Sugar, to taste
  • Pinch of salt
  • 1 large cucumber, peeled and de-seeded, if desired
  • ÂĽ yellow onion, sliced thinly
  • 1 handful of grape tomatoes, sliced in half

How to Make a Cucumber Salad:

Combine the seasoned rice vinegar, water, sugar, and salt in a large serving bowl.

Add the cucumber, onion slices, and grape tomatoes to the large bowl and toss to mix well.

Let the salad marinate in the fridge (stirring occasionally) for at least 1 hour.
