Chocolate Covered Clementines
These chocolate covered clementines were a super fun after-school snack that made my kids very happy! I dipped the clementines in milk chocolate and then drizzled the top with white chocolate. They were a snap to make, looked pretty, and my kids thought they were awesome.
Chocolate Covered Clementines
Ingredients:
- 2 clementines peeled & pieces separated
- ⅓ cup milk chocolate chips
- 1 ½ tsp coconut oil divided
- ¼ cup white chocolate chips
How to Make Chocolate Covered Clementines
Peel the clementines then place them on paper towels to dry up any juices. Make sure the pieces are very dry. Side Note: The chocolate will not stick to the fruit if they are wet!
Place the chocolate chips and one teaspoon of coconut oil in a glass bowl then put into the microwave for 30 seconds. Remove and stir then place back into the microwave for 10 seconds. Remove and stir then place back into the microwave for 10 seconds. Remove and stir until completely melted. If needed, continue cooking for 10-second increments. Be careful not to overcook the chocolate!
Dip half of the clementine into the melted milk chocolate then place it on a baking sheet topped with wax paper. Repeat with the remaining pieces of clementine.
Place the white chocolate chips in a glass bowl along with the remaining 1/2 teaspoon of coconut oil. Remove and stir then place back into the microwave for 10 seconds. Remove and stir then place back into the microwave for 10 seconds. Remove and stir until completely melted. Be careful not to overcook the white chocolate!
Spoon the white chocolate into a small zip lock bag. Cut a super small hole in the corner of the bag and drizzle the white chocolate back and forth over each clementine piece. Place the tray into the refrigerator for at least 10-15 minutes before serving. Enjoy!
