Spinach Salad with Watermelon and Feta
This refreshing & delicious spinach salad with watermelon and feta is loaded with great flavors and textures. A perfect salad for hot summer days!
My husband and I recently had dinner out while camping and enjoyed a tasty pizza & spinach salad with watermelon and feta. We both thought the salty feta cheese paired nicely with the sweet watermelon, crunchy pine nuts, and tangy white balsamic vinaigrette. I recreated the salad for a recent lunch on a super hot day and we thought it was filling and delicious without being heavy. This is really a terrific summer salad, especially on hot days.
How to Make a Spinach Salad with Watermelon and Feta
Make the white balsamic vinaigrette by combining olive oil, white balsamic vinegar, sugar, sea salt, and freshly cracked pepper in a small jar; seal with a lid and shake until well combined. Set aside to allow flavors time to mingle. Side Note: We enjoy a very tangy vinaigrette. If you don’t, use less vinegar, to taste.
Make the salad by placing the spinach, watermelon, red onion, and toasted pine nuts in a large bowl.
Drizzle with some well-shaken vinaigrette, to taste; toss to coat evenly. Top with feta cheese and season with a bit more sea salt and freshly cracked black pepper, to taste. Serve immediately. Enjoy.

Ingredients
White Balsamic Vinaigrette:
- 3 tbsp good olive oil **Vegetable oil will work too
- 3 tbsp white balsamic vinegar **Use less vinegar if you don't want it very tangy
- Pinch of white sugar, to taste **Honey will also work well
- Sea salt and freshly cracked pepper, to taste
Salad:
- 4 cups baby spinach
- 1½ cups watermelon, cut into bite-size cubes **Use a seedless watermelon
- ½ small red onion, sliced thinly **Soak slices in ice water for 10 minutes if the flavor is too strong
- 2 tbsp toasted pine nuts
- Feta cheese crumbles, to taste
- Sea salt and freshly cracked pepper, to taste

When I read the title, my reaction was “huh” then after reading the recipe and thinking more about it, I realized I like all of those ingredients, they could work well together, and we should give it a try. I keep seeing the weather reports for you including the large number of folks w/o AC and I can’t imagine living with that situation. You are hotter than us.
