Loaded Bean and Cheese Tostadas
Perfect for snacks or an easy meal, these loaded bean and cheese tostadas are easy to make and disappear quickly.
Here is another clean-out-the-fridge recipe! I recently made some soft tacos for dinner and a big batch of homemade refried beans and it was a tasty meal. I stumbled upon these small tajin tostada shells at the store recently and I had to get them for my kids who LOVE tajin seasoning. I used homemade beans but you can also use canned refried beans to made this recipe an extra quick and easy meal. These loaded bean and cheese tostadas were a big hit with the whole family and a tasty lunch using up leftovers.
How to Make Loaded Bean and Cheese Tostadas

Make the salsa–click here for the recipe. Set aside to allow flavors time to mingle.

Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
Spread some refried beans on top of each tostada shell and sprinkle with some cheese.
Place into the oven to back for 7-10 minutes, or until the beans are hot and the cheese is melted.
Remove from the oven and top with shredded lettuce, avocado slices, pico de gallo, cilantro, green onion, sour cream, and cotija cheese. Serve immediately with salsa on the side. Enjoy.

- Lettuce, shredded
- Avocado slices

- Green onions, sliced
- Fresh cilantro leaves, chopped

Tajin seasoning is tangy, salty and only a little bit spicy. It has a bright citrusy taste with touch of a red chile flavor. It’s really great on both sweet and savory foods–my kids sprinkle the seasoning on melon and tropical fruit.
The tostada shells had a great flavor and a nice crunch.
