Spinach Salad with Strawberries, Candied Walnuts, Feta, and Pomegranate Seeds

We had friends over for dinner, and I prepared a spinach salad with strawberries, candied walnuts, feta, and pomegranate seeds tossed in a balsamic vinaigrette. This beautiful and easy spinach and strawberry salad recipe was a big hit with the adults and kids, and we thought it paired nicely with linguine, crusty bread, and a blackberry galette.
Spinach Salad with Strawberries, Candied Walnuts, Feta, and Pomegranate Seeds
Ingredients:
- ½ cup of walnut pieces
- 1 tsp of white sugar
- Pinch of cardamom
- 3 cups of baby spinach
- 2 cups of romaine lettuce, chopped
- 1 cup of sliced strawberries
- 2-3 tbsp feta cheese
- 2-3 tbsp pomegranate seeds

How to Make a Spinach Salad with Strawberries, Candied Walnuts, Feta, and Pomegranate Seeds
Make the balsamic Dijon vinaigrette, then set it aside.
Prepare the candied walnuts by heating a small skillet over medium-low heat. Add the walnut pieces, sugar, and cardamom. Stir often until the sugar caramelizes and sticks to the pecans, and the walnuts are toasted. Remove from the heat and let cool.
Make the salad by combining the spinach and romaine lettuce in a large serving bowl. Top with sliced strawberries, cooled walnuts, feta cheese, and pomegranate seeds.
To serve, toss with the well-whisked vinaigrette, to taste, and serve immediately. Enjoy!

First time commenter but I have read your blog for a long time. I had major back issues for years and ended up with back surgery. I know that many back issues can be resolved with Physical Therapy, and much less invasive procedures, so if you need someone to ask, I would be happy to answer any questions. I became quite the back expert. Back pain is so debilitating. I am sure you won’t be advised to do it, but honestly, any type of back surgery is the very, very last resort. Hope you feel better and I am going to make this salad and pasta dish this weekend.
