Loaded Tropical Granola

This loaded tropical granola is filled with oats, macadamia nuts, toasted coconut, dried mango bits, goji berries, and banana chips.

Loaded Tropical Granola

We love homemade granola, and my daughter recently asked me to make a new batch with tropical flavors, so I made this loaded tropical granola recipe. This granola is delicious stirred into yogurt, as a cereal with milk, as an ice cream topper, or eaten on its own as a tasty snack!  This easy homemade tropical granola recipe is more delicious than store-bought, and much more economical.

Loaded Tropical Granola

Ingredients:

  • 4 cups Old-Fashioned oats
  • 1 cup macadamia nuts, chopped
  • ½ tsp salt
  • ½ cup coconut oil, melted
  • ½ cup honey
  • 1½ tsp coconut extract
  • ½ tsp vanilla extract
  • ½ cup coconut, shredded
  • ¼ cup dried mango, chopped into small bits
  • ¼ cup banana chips, chopped
  • 2 tbsp goji berries, chopped

How to Make Loaded Tropical Granola

Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.

Combine the oats, macadamia nuts, and salt in a large mixing bowl; mix well with a rubber spatula.

Combine the coconut oil, honey, coconut extract, and vanilla extract in a small bowl; whisk until well combined.

Pour the coconut oil mixture over the oat mixture and stir until oats are evenly coated.  Spread the mixture out onto the baking sheet. Side Note: You will add the coconut after it bakes for a while. 

Place into the oven to bake for 15 minutes.

Remove the baking sheet and stir in the shredded coconut, and spread it out evenly. Return to the oven and bake for 10 minutes.

Let the granola cool on the baking sheet. It will further crisp up as it cools.

Once cool, stir in the mango, banana chips, and goji berries. 

Store the granola in an airtight container. Enjoy.

    That Loaded Tropical Granola sounds amazing! The combination of macadamia nuts, toasted coconut, and dried mango is so appealing. I love that you made it based on your daughter’s request – it makes the recipe even more special. Definitely adding this to my weekend baking list!
