Oven-Baked Strawberry Pancake

This oven-baked strawberry pancake is a wonderful combination of a large fluffy & crispy pancake that’s bursting with strawberries and chocolate chips.

I found a recipe on Martha Stewart a long time ago for an oven-baked giant pancake and my kids love it for breakfast. I really love that you can adapt the recipe to use whatever fruit you may have on hand. This time I made an oven-baked strawberry pancake and decided to add some semi-sweet chocolate chips to make it a little more special. My kids were pretty happy to wake up and devour this giant pancake that they both loved.

How to Make an Oven-Baked Strawberry Pancake

Preheat the oven to 375 degrees. Place a 10-inch cast iron skillet into the oven while it preheats.

Combine the flour, 3 tablespoons of sugar, baking powder, and salt together in a large bowl. Mix until well combined.

Whisk together the milk, egg, melted butter, and vanilla until well combined.

Add the milk mixture to the flour mixture and stir until just combined.

Once the oven and skillet have preheated, carefully remove the skillet from the oven and add the last tablespoon of butter, swirling to coat the pan and sides evenly.

Pour the batter into the hot skillet and smooth the top with an offset spatula. Top the pancake evenly with the strawberry slices and a few chocolate chips then sprinkle with the remaining teaspoon of sugar.

Bake for 23-25 minutes. Remove from the oven and place a few more chocolate chips on top then allow to cool for a few minutes before sprinkling with powdered sugar. Serve with butter and maple syrup. Enjoy.

  • Butter

    1. I worked 30 yrs in Chicago restaurant’s and in certain Greek Restaurants you can order what’s called a Baked Apple Pancake they are amazing!!!! Google the recipe folks you won’t be sorry

  1. I love making this kind of pancake. There’s a name for them that’s escaping me right now… oh, Dutch pancake? In any case, they’re really fun to make, and I have little cast iron pans to make them for my grand kids!

    Absolutely DELICIOUS ! I made it this morning for my wife and I and we loved it. I only put the chocolate on 1/2 of it because my wife doesn’t eat chocolate but the full recipe compliment went on my half and I loved it!
