We’ve been enduring a heatwave of 100+ degree temperatures for several days, which means I don’t feel like cooking and heating the house. This simple cherry tomato salad recipe is filled with sweet and delicious cherry tomatoes, shallots, and marinated in a garlicky balsamic vinaigrette. Simple, versatile, and delicious! These marinated tomatoes paired nicely with grilled steak kebabs with chimichurri and grilled corn on the cob.
Simple Cherry Tomato Salad
Balsamic Vinaigrette:
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- ½ tsp Dijon mustard
- Honey, to taste
- 1 small clove of garlic, minced
- â…› tsp crushed red pepper flakes
- â…› tsp dried basil
- ⅛ tsp dried oregano
- Sea salt and freshly cracked black pepper, to taste
Cherry Tomato Salad:
- 2½ cups cherry tomatoes, halved
- 1 small shallot, minced
- 1 tbsp fresh parsley, finely chopped
- Sea salt and freshly cracked black pepper, to taste

How to Make a Simple Cherry Tomato Salad
Prepare the balsamic vinaigrette by combining the olive oil, balsamic vinegar, Dijon mustard, honey, garlic, crushed red pepper flakes, basil, oregano, sea salt, and freshly cracked black pepper to taste in a small glass jar. Seal with a lid and shake well.
Prepare the cherry tomato salad by combining the tomato halves, shallot, parsley, sea salt, and freshly cracked black pepper to taste.
Drizzle with the well-shaken balsamic vinaigrette. Toss until evenly coated.
Set aside to allow the flavors some time to mingle, tossing occasionally, or serve immediately. Enjoy.
