Asian Cucumber and Carrot Slaw
I made an Asian-inspired meal this evening for dinner and served lettuce wraps and paired them with this tasty Asian cucumber and carrot slaw that I found on Kitchen Confidante. This Asian salad is quick to throw together, beautiful to look at, and tastes so delicious. We all loved the crisp veggie “noodles” with the tangy dressing This slaw is fun to eat, healthy, and delicious – you can’t beat that!
How to Make an Asian Cucumber and Carrot Slaw
Use a julienne peeler or grater to shred the cucumber and carrots into long strips.
Toss the vegetables in a medium bowl, along with both kinds of vinegar, water, sugar, sesame oil, and garlic. Toss to coat evenly. Garnish with sesame seeds and cilantro. Chill until ready to serve. Best served cold. Enjoy.

- 1 tsp water

i’m not sure i have the patience to turn carrots and zukes into such delicate, lovely shreds, but the dish sounds great!
I have a julienne peeler that I’ve never used, so i’m glad i finally have a use! I love asian flavors and cool, crisp salads- this is totally something i’d love.

This looks great. I make a similar dressing for my Asian slaw, but I take the shortcut of using a bag of coleslaw mix, lol.

Hi, from your photos it looks like there are garlic cloves in this recipe from the ones in the small cup/bowl, but no mention of garlic in the recipe. Is there an error in the recipe or what? i’d like to know before I try the recipe. Thank you.
