Black Bean and Cheese Quesadilla

This quick and easy black bean and cheese quesadilla recipe is a healthy lunch that my kids love. I usually make a quick batch of guacamole for delicious dipping, along with sour cream, salsa, and tortilla chips.
Black Bean and Cheese Quesadilla
Ingredients:
- 2 flour tortillas
- ½ cup of black beans, rinsed & drained
- ½ cup shredded cheddar cheese
- 2 tbsp tomatoes, diced
- 1 tbsp green onions, sliced, plus more for garnish if desired
Serving:
How to Make a Black Bean and Cheese Quesadilla
Heat a large skillet over medium heat.
Add one tortilla and layer with the beans, tomatoes, green onions, and cheese. Top with the other tortilla.
Cook for 3-4 minutes on each side.
Cool for 1 minute before slicing into wedges (like a pizza).
Top with green onions and serve immediately with guacamole, salsa, and sour cream. Enjoy.
