Turkey, Pancetta, and Avocado Sandwich

I am a huge fan of sandwiches, and think they are a great way to use up ingredients I have on hand. I needed to use an avocado, so I decided to make a turkey, pancetta, and avocado sandwich, and it turned into a wonderful club sandwich. Both of my kids LOVED it and asked if they could have it for dinner too. This fancy club sandwich recipe was a quick and easy meal that paired nicely with baked sweet potato chips and a fruit salad.
Turkey, Pancetta, and Avocado Sandwich
Ingredients:
- Par-baked hoagie roll, baked per instructions (or bread of choice)
- 3 slices of pancetta
- Mayonnaise, to taste
- Roma tomato, sliced thickly
- Sea salt and freshly cracked black pepper, to taste
- Turkey, slices (as much as you want)
- Avocado, sliced thinly
- Yellow onion, sliced thinly
- Cheddar, Havarti, or Swiss cheese, sliced
- Iceberg or romaine lettuce, shredded
How to Make a Turkey, Pancetta, and Avocado Sandwich:
Bake bread per instructions.
Meanwhile, cook the pancetta in a large skillet until crispy. Place on a paper towel to drain the fat.
Once the bread is done & has cooled for a moment, slice lengthwise down the middle.
Slather each half of the bread with mayonnaise to taste.
Top one side with the tomatoes, then season them with sea salt and freshly cracked black pepper, to taste.
Top with turkey, avocado, onion, cheese, and lettuce.
Top with the remaining bread half and serve immediately. Enjoy.

I love sandwiches like this! This is almost the same as one of my favorite combinations. I would add chipotle mayo (pureed chipotle peppers in adobo sauce mixed with mayo) and red onions. Perfection in sandwich form!
