Roasted Asparagus and Grape Tomatoes with Asiago Cheese

I am back from my trip and had an excellent time. Eight children, along with four women, can be a bit hectic and LOUD, but we all had a good time. It was nice to get away with my dear friends and spend time with all of our children. We enjoyed playing in the tide pools, running in the surf, digging in the sand, visiting the aquarium, and spending time together. I was making some chicken parmesan and crusty bread for dinner, and these roasted asparagus and tomatoes paired nicely with them.
Roasted Asparagus and Grape Tomatoes with Asiago Cheese
Ingredients:
- 10 asparagus spears (ends removed)
- 20 grape tomatoes
- 1 tbsp olive oil
- Garlic powder, to taste
- Pinch of crushed red pepper flakes, to taste
- Sea salt and fresh cracked pepper to taste
- 2 tbsp Asiago, grated

How to Make Roasted Asparagus and Grape Tomatoes with Asiago Cheese:
Preheat oven to 400 degrees. Coat a large baking dish or baking sheet with olive oil cooking spray.
Add tomatoes, asparagus spears, olive oil, garlic powder, crushed red pepper flakes, sea salt, and freshly cracked black pepper, to taste, then toss to coat evenly.
Top with the Asiago cheese.

Place in the oven to roast for 5-8 minutes, until asparagus is tender and the tomatoes are near popping.
Place on a serving plate. Enjoy.
