Avocado and Tomato Salad

I found some beautiful vegetables at the farmer’s market recently and decided to make this simple avocado and tomato salad using some of them. I seasoned them simply with sea salt, freshly cracked pepper, along with a drizzle of olive oil, a splash of red wine vinegar, and a sprinkle of fresh cilantro. It was simple and so delicious–we all loved this salad and thought it paired nicely with a slow-roasted chicken with cilantro-lime butter, garlic rice, and a Mexican wedge for a delicious and flavorful meal.
Avocado and Tomato Salad
Ingredients:
- Red tomato, sliced
- Orange tomato, sliced
- Yellow tomato, sliced
- 2 avocados, peeled and sliced
- Sea salt and freshly cracked pepper, to taste
- Drizzle of olive oil, to taste
- Drizzle of red wine vinegar, to taste
- Sprinkle of fresh cilantro or parsley, finely chopped

How to Make an Avocado and Tomato Salad
Place the sliced tomatoes on a serving plate. Add the sliced avocado. Season with sea salt and freshly cracked pepper, to taste.
Drizzle with olive oil and red wine vinegar, then sprinkle with freshly chopped cilantro or parsley.
Serve immediately. Enjoy.

Simple, elegant, colourful, delicious. Also, excellent reminder that I need to get cracking with my tomato plants – they won't plant themselves, I fear.

this is almost too good to be true. what a great, simple salad. incidentally, have you ever tried to eat avocado and tomato on the same sandwich? don't place them side by side–the slide factor is ridiculous. 🙂
