Marinated Grape Tomatoes with Shallot and Garlic
I love this side dish because it’s very easy to make and super versatile. You can use whatever flavor of vinegar you want, you can skip the crushed red pepper flakes and use fresh herbs instead (or use both!). I let the tomatoes marinate for at least an hour before serving to allow all of the flavors to mingle. It’s a nice side dish that pairs well with chicken, seafood, pork, or beef and my entire family enjoys it.
How to Make Marinated Grape Tomatoes with Shallot and Garlic
Combine the sliced tomatoes, shallot rings, and garlic slivers into a serving bowl.
Add the seasoned rice vinegar, olive oil, and crushed red pepper flakes. Season with sea salt and freshly cracked pepper, to taste. Set aside for 30-60 minutes to allow flavors to mingle before serving. Enjoy.

- 1 pint mixed grape tomatoes
- 1 small shallot sliced thinly into rings
- 1 small clove of garlic sliced thinly into slivers
- ¼ cup seasoned rice vinegar
- 2 tbsp olive oil
- Pinch of crushed red pepper flakes to taste
- Sea salt and freshly cracked pepper to taste
