Marinated Grape Tomatoes with Shallot and Garlic

I love this tasty tomato side dish recipe because it’s very easy to make and super versatile. You can use whatever flavor of vinegar you want; you can skip the crushed red pepper flakes and use fresh herbs instead (or use both!). I let the tomatoes marinate for at least an hour before serving to allow all of the flavors to mingle. We all enjoyed these marinated grape tomatoes and thought they paired nicely with a juicy steak, roasted potatoes with broccoli, and some soft parmesan dinner rolls.

Marinated Grape Tomatoes with Shallot and Garlic

Ingredients:

  • 1 pint mixed grape or cherry tomatoes
  • 1 small shallot, sliced thinly into rings
  • 1 small clove of garlic, sliced thinly into slivers
  • ¼ cup seasoned rice vinegar
  • 2 tbsp olive oil
  • Pinch of crushed red pepper flakes, to taste
  • Sea salt and freshly cracked pepper, to taste

How to Make Marinated Grape Tomatoes with Shallot and Garlic:

Combine the sliced tomatoes, shallot rings, and garlic slivers into a serving bowl.

Add the seasoned rice vinegar, olive oil, and crushed red pepper flakes. Season with sea salt and freshly cracked pepper to taste.

Set aside for 30-60 minutes to allow flavors to mingle before serving. Enjoy.
