Bean Tostadas

This easy recipe for bean tostadas is one of my favorite meals that I have been making for years–it’s simple, inexpensive, and tastes fantastic. My kids call them Mexican pizzas and absolutely love them. This easy vegetarian tostada recipe is always a hit with my family and pairs nicely with a Mexican wedge salad and some tortilla chips with salsa.

Bean Tostadas

Tostadas:

  • Corn tortillas
  • Refried beans or spicy pinto beans (store-bought refried beans also work), warmed
  • Sharp cheddar cheese, shredded
  • Lettuce, chopped
  • Tomato, diced
  • Green onions, sliced
  • Black olives, sliced
  • Cilantro, chopped
  • Cotija cheese, shredded, optional

How to Make Bean Tostadas:

Preheat the oven to 400 degrees.

Make the tostada shells by coating the corn tortillas with olive oil cooking spray on both sides.

Place them on a baking sheet and bake for 10 minutes, flipping halfway, or until golden brown and crispy.

Meanwhile, heat the refried beans or spicy pinto beansin a small saucepan over medium heat, stirring occasionally.

Prepare the tostadas by layering the crispy tortilla with warm beans, sharp cheddar, lettuce, black olives, tomatoes, green onions, cilantro, and cotija cheese.

Serve immediately with sour cream, guacamole, salsa, hot sauce, and lime wedges.  Enjoy.
