Roasted Broccoli with Parmesan

Roasted Broccoli with Parmesan

I wanted a quick and easy side dish recipe for dinner last night that used ingredients I had in the fridge. I grabbed some broccoli florets, parmesan cheese, and garlic, then roasted them. My son wasn’t a fan of the broccoli, but the rest of us were–even my daughter, which surprised me because she isn’t a big fan of cheese. This roasted broccoli with parmesan recipe was easy to make and paired nicely with some flank steak with balsamic roasted tomatoes and a mashed potato casserole.

Roasted Broccoli with Parmesan

Ingredients:

  • 2 cups of broccoli florets
  • 2 tbsp olive oil
  • Pinch of crushed red pepper flakes, to taste
  • Sea salt and freshly cracked pepper, to taste
  • 1 clove of garlic, minced
  • Parmesan, finely grated

How to Make Roasted Broccoli with Parmesan

Preheat the oven to 425 degrees. Coat a baking sheet with olive oil cooking spray.

Toss the broccoli with olive oil, then season with crushed red pepper flakes, sea salt, and freshly cracked pepper to taste.

Place into the oven and roast for 15 minutes.

Flip the broccoli and add the minced garlic, making sure to toss to coat evenly with a spatula. Continue to roast for 2-3 minutes.

Remove from the oven and place in a serving bowl, then sprinkle with finely grated parmesan cheese.

Serve immediately. Enjoy.
