Roasted Fig Crostini with Goat Cheese and Honey
I had some ripe figs that were ready to be used up so I decided to make an appetizer lunch for my kids and me. I roasted the fig slices for a while until they were sweetened and warm. I sprinkled some crumbled goat cheese on top of some toasted slices of baguette then topped the cheese with some roasted figs and a drizzle of honey. It was delicious! My daughter and I loved the sweetened figs with the creamy flavorful cheese and the crisp crostini. My son wasn’t a huge fan of the figs – he said the texture was weird for him, so he settled for the goat cheese, baguette, and a drizzle of honey. I didn’t mind – more roasted figs for me!
How to Make Roasted Fig Crostini with Goat Cheese and Honey
Preheat the oven to 375 degrees.
Slice the small baguette into thin pieces then put them on a dry baking sheet. Place into the oven and bake until the slices are toasted, about 5 minutes. Remove from the oven and set aside.
Coat a small baking pan with some cooking spray.
Slice the figs into thirds and put them into the baking pan. Place them into the oven to bake for 10 minutes, or until the figs are softened. Remove from the oven.
Sprinkle some goat cheese crumbled on top of the slices of toasted baguette then top with fig slices. Drizzle some warm honey on top of each crostini. Serve immediately. Enjoy.
