Blueberry Waffles

We all LOVE waffles in my house and especially enjoy fresh blueberry waffles! I found a tasty base recipe for waffles from Barefeet in the Kitchen that I’ve used for a long time but adapted the cooking method a bit to prevent my berries from burning on my waffle maker. I’ve found that putting some batter on the hot waffle maker and then adding a few berries followed by covering each berry with a bit more batter before closing the lid seems to prevent the berries from burning to the waffle maker. These waffles are a big hit with my kids – they especially love that the almond extract adds a cherry flavor to the batter. I serve these waffles with fresh blueberries, butter, and real maple syrup.

Blueberry Waffles

Ingredients:

  • 2 cups flour
  • 4 tsp baking powder
  • 1 tbsp sugar
  • ½ tsp salt
  • 1½ cups milk
  • 2 eggs, well beaten
  • 6 tbsp unsalted butter, melted & cooled
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 1 cup fresh blueberries, plus more for serving

How to Make Blueberry Waffles

Preheat the waffle iron.

Make the batter by combining the flour, baking powder, sugar, and salt in a large bowl. Add the eggs and milk then stir to combine. Add the melted butter, vanilla extract, and almond extract then stir to combine.

Once the waffle iron is HOT, spray with a bit of cooking spray then add some batter to each side of the waffle maker (but not all that you would normally use). Sprinkle a few blueberries on top then add a few spoonfuls of extra batter over each blueberry.

Side Note: Don’t add too many blueberries – only 4-5 on each waffle portion.

Close the lid and cook until golden brown. Serve immediately with a dollop of butter, fresh blueberries, and maple syrup. Enjoy!

  1. I put tiny blueberries right into my batter, and let them cook in the waffles. The kids love it! I’m glad you found a waffle recipe that doesn’t call for separating the eggs and beating the whites stiff. I don’t find that those hold up well in the fridge for a couple of days.
