Steamed Artichokes

Artichokes have always been one of my favorite vegetables! It was a very special treat growing up when my Mom would bring artichokes home. She would boil them & we would dip the leaves in mayonnaise (which is still delicious to me). I have changed my cooking method to steaming and have added a few more seasonings to the mayonnaise for dipping. My children LOVE this easy recipe for steamed artichokes. These artichokes pair nicely with lemon salmon, garlic rice, and roasted tomatoes.
Steamed Artichokes
Artichokes:
- One artichoke per person
- Bay leaf
- 6 cloves of whole garlic
Soy Garlic Aioli:
- ½ cup mayonnaise
- 1 clove of garlic, finely minced or grated
- 1-2 tbsp soy sauce, to taste
Other Dipping Options:
- Mayonnaise
- Melted butter with 1 clove of minced garlic
- Fresh lemon juice, to taste
How to Make Steamed Artichokes:
Prepare the cooking water by adding a bay leaf & garlic cloves to a large pot with a few cups of water over medium-high heat. Place the steamer in the pot.
Prepare the artichokes for cooking by trimming off the sharp ends of the artichoke leaves with scissors, if desired. Cut the top and stem off and clean well.
Cook the artichokes by placing them in the steamer and covering with a lid.
Steam for 35-45 minutes, depending on their size, or until the leaves can be easily removed.
Meanwhile, make the soy garlic aioli by combining the mayonnaise, garlic, and soy sauce until well-mixed.
Remove from the steamer and set on a serving plate.
Serve hot or at room temperature with your preferred dipping sauce. Enjoy.
Eat the artichokes by dipping the bottom end of your leaves in the aioli, garlic butter, or mayonnaise.
Once you get down to the artichoke heart, remove the fuzzy covering with a spoon, then dip the artichoke heart in the aioli and eat. Enjoy.

Hey, thanks for the blog article.Really looking forward to read more. Want more.
Hi, Pam,
I would have never thought to mix mayonnaise and soy sauce… and with the touch of garlic this sauce is delicious to go with the artichokes.
Since I haven’t got a steam cooker I had to improvise one. And it’s very easy to do using a cooking pot, a strainer and a cover.
P.S. I’ve published the recipe in my blog 😉
