Noodle Stir Fry with Bok Choy
A fast, inexpensive, and flavorful dish using ramen noodles stir-fried with bok choy that’s on the table in just 20 minutes. Perfect for a quick weeknight meal.
I found this recipe for a noodle stir fry with bok choy on Choosing Chia and decided to make it for my kids’ lunch recently. I used bok choy in this recipe but you can use whatever veggies you have on hand. I loved how quick and easy this recipe was to throw together and that my kids thought it was delicious. I’ll be making this ramen noodle stir fry again and again and I have a feeling my kids will be making it too.
How to Make a Noodle Stir Fry with Bok Choy
Make the sauce by combining the sweet chili sauce, soy sauce, sesame oil, and sriracha together then whisk until well combined; set aside until needed.
Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the white parts of the green onion along with the bok choy. Cook, stirring often, for 3-4 minutes. Add the minced garlic and cook, stirring constantly, for 1 minute.
While the veggies are cooking, cook the ramen noodles in boiling water until they begin to break apart and are slightly soft, about 1 minute. Drain and place the noodles in the skillet with the stir-fried veggies.
Add the whisked sauce to the skillet and toss to combine. Cook for 2-3 minutes, tossing frequently until evenly coated with the sauce. Pour into a serving bowl and sprinkle the top with the dark green portion of the green onions along with the toasted sesame seeds. Serve and enjoy.

I love bok choy! This makes a quick and very tasty lunch.
I’m always impressed with the wide variety of dishes you cook. Your kids should grow up liking everything.
This looks great — tons of flavor, and really quick to prepare. And I love ramen noodles! That flavoring pack — not so much, but your instructions to discard it are spot on. 🙂 Really nice — thanks.
One of my favorite vegetables. Your recipe looks delicious,
I’ve been majorly craving an easy noodle dish like this. Just can’t with complicated recipes these days haha.
Easy and delicious looking. I do like bok choy and it looks tasty with all the noodles.
Made this tonight as I had fresh noodles and bok Choi in the fridge. Very easy to make and was enjoyed by all. Served as a side with pork chops, worked well together. Would make again.

Hi Pam. I loved the stir fry recipe..So easy and delish. I didn’t have much in the house to cook as I need to clean the fridge before I go food shopping. So it was perfect… I did add julienned carrots and ginger to the mix . Thank you for posting this recipe
