Peach and Brie Puff Pastry Tarts
Flaky puff pastry, creamy brie, and fresh summer peaches are baked together to create these delicious sweet and savory mini-tarts.
These peach and brie puff pastry tarts make an amazing snack or gourmet dessert and they are super easy to make. I found a recipe for these little beauties on All We Eat and since I had everything on hand, I surprised my kids with them. I made these tasty tarts a little extra special with a drizzle of hot honey but they would also be tasty with regular honey. Quick, simple, and so delicious.
How to Make Peach and Brie Puff Pastry Tarts
Preheat the oven to 425 degrees. Line a baking sheet with parchment paper.
Thaw the puff pastry and cut it into 4 equal squares.
Place a few slices of brie cheese in the center of each puff pastry square. Top the cheese with a few fresh thyme leaves.
Finally, top with a few peach slices. Fold the edges of the pastry inward. Brush the pastry with the egg.
Place into the oven to bake for 15-20 minutes, turning the baking sheet halfway through baking, until flakey and golden brown.
Drizzle the top with hot honey and more thyme leaves. Serve immediately. Enjoy.

wow!!! These are fantastic! I could melted eat brie with shoe soles I think, but paired with peaches, plus the hot honey? Incredible!!! thanks!
These pastries look delicious and easy to make.
These look amazing! Just wondering when it says to turn the pastries halfway through baking time, does it mean flip them completely over? Or just turn the pan? Sorry… Probably a silly question. I just thought the peaches might fall out
Rachel,
Turn the baking sheet halfway through baking time. Do not flip them over.
