Chicken, Grape, and Walnut Salad Sandwich

I made a roasted chicken for dinner and used the remaining meat for this chicken, grape, and walnut salad sandwich recipe the next day. This chicken salad is full of flavors & textures, a little sweet, salty, crunchy, & creamy. This quick and easy chicken salad sandwich recipe pairs nicely with fruit salad and baked sweet potato chips.

Chicken, Grape, and Walnut Salad Sandwich

Chicken Salad:

  • 2½ cups roasted chicken, diced
  • 1 handful of red, seedless grapes, chopped, to taste
  • 1 handful of toasted walnuts, chopped, to taste
  • 1 stalk of celery, diced finely
  • 1 tbsp of yellow onion, diced finely
  • 2-3 tbsp of mayonnaise, to taste
  • 1-2 tsp red wine vinegar, to taste
  • Sea salt and freshly cracked black pepper, to taste

Other Ingredients:

  • Iceberg or Romaine lettuce
  • Bread of choice (I used whole wheat)

How to Make a Chicken, Grape, and Walnut Salad Sandwich:

Prepare the chicken salad by combining the chicken, grapes, walnuts, celery, onion, mayonnaise, red wine vinegar, sea salt, and freshly cracked black pepper to taste.

Make the sandwich by spreading some chicken salad over a slice of bread, add lettuce & top with another slice of bread.

Serve immediately and enjoy.

Chicken Salad:

  • 6 slices of bread I used whole wheat (toasted if desired)

Instructions

  • Prepare the chicken salad by combining the chicken, grapes, walnuts, celery, onion, mayonnaise, red wine vinegar, sea salt, and freshly cracked black pepper to taste.
  • Make the sandwich by spreading some chicken salad over a slice of bread, add lettuce & top with another slice of bread.
  • Serve immediately and enjoy.
