Roasted Garlic Mashed Potatoes
I love all potatoes but one of my favorite side dishes is this easy roasted garlic mashed potatoes recipe because they are flavorful, creamy, and delicious! These homemade roasted garlic mashed potatoes were a big hit with my whole family and paired nicely with Asian Inspired Braised Beef Short Ribs and my House Salad.
Roasted Garlic Mashed Potatoes:
Ingredients:
- 4 medium russet potatoes, peeled and cut into equal size chunks
- 1/2 cup milk
- 4 tbsp butter
- Sea Salt and freshly cracked pepper, to taste
- 2 bulbs of Roasted garlic cloves (see recipe here)
How to Make Roasted Garlic Mashed Potatoes
Place potatoes in a large pot of well-salted water. Boil the potatoes for about 25 minutes, or until fork-tender.
Drain the potatoes in a strainer then put them back in the pot.
Place the milk and butter in a microwave-safe bowl and cook for 30 seconds or until the butter has melted and the milk is warm.
Pour the warm milk/butter mixture on the potatoes, squeeze the roasted garlic out of its skin and onto the potatoes then season with sea salt and freshly cracked pepper.
Mash by hand or with a hand mixer until light and fluffy. Taste and re-season if needed. Serve plain or with butter and extra black pepper. Enjoy!
