Baked Eggs with Bacon, Tomatoes, and Sharp Cheddar

I am loving baked eggs lately. Not only are they super quick and easy to make, but you can also add whatever combination of ingredients I have on hand. I woke up this morning craving bacon and eggs, so I made these baked eggs with bacon, tomatoes, and sharp cheddar for my husband and me instead. We both loved this easy baked eggs recipe and thought they paired nicely with some crispy hash browns and a fruit salad.
Baked Eggs with Bacon, Tomatoes, and Sharp Cheddar
Ingredients:
- Butter or olive oil cooking spray
- 2 slices of bacon, cooked and crumbled
- Sharp cheddar cheese, grated
- 5-6 grape tomatoes, sliced in half
- 1 green onion, sliced
- 2 eggs
- 2 tsp whole milk or heavy cream
- Sea salt and freshly cracked pepper, to taste
How to Make Baked Eggs with Bacon, Tomatoes, and Sharp Cheddar:
Preheat the oven to 350 degrees. Coat two small ramekins with butter or olive oil cooking spray.
Place a few bacon crumbles, a few tomatoes, a sprinkle of cheddar cheese, and some green onions into each of the ramekins.
Crack an egg into each ramekin, being careful not to break the yolks.
Add 1 tsp of milk or cream into each, a few more bacon crumbles and tomatoes, a little more cheddar, and green onion to the top of each.
Season with sea salt and freshly cracked pepper to taste.

Place on a baking sheet and cook for 5 minutes.
Turn the oven to broil and cook for another 5 minutes or until the whites are set but the yolk remains soft.
Remove from the oven and serve immediately. Enjoy.
