Wilted Spinach with Dried Cherries and Pine Nuts

This easy wilted spinach with dried cherries and pine nuts recipe was a big hit with everyone. The balsamic vinegar gave such a great flavor boost to this side dish. We loved the sweet and tangy cherries tossed with the wilted spinach and toasted pine nuts. This easy spinach side dish recipe paired nicely with pork chops, mashed potato casserole, and garlic-roasted tomatoes.

Wilted Spinach with Dried Cherries and Pine Nuts

Ingredients:

  • 1 tbsp olive oil
  • 1 clove of garlic, minced
  • 5 cups of baby spinach, washed
  • 1 tbsp dried cherries
  • 1 tbsp pinenuts,  toasted
  • Balsamic vinegar, to taste

How to Make Wilted Spinach with Dried Cherries and Pine Nuts

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook, stirring constantly, for 30 seconds.

Add the washed spinach, dried cherries, and pine nuts, then toss often for 1 minute. Season with sea salt and freshly cracked pepper, to taste, then drizzle with balsamic vinegar. Keep tossing while it cooks until just wilted.

Remove from heat and serve immediately. Serve with more balsamic vinegar, if desired. Enjoy.

  1. Hi Pam! Found & made this tonight, it’s simple & delicious . Although I didn’t have cherries or pine nuts, I decided to sub in dried cranberries & walnuts. Absolutely wonderful! I’ll definitely try with the cherries/pine nuts, love them too…elevated my chicken & rice dinner! Thank you so much
