Homemade Refried Bean and Cheese Flautas
My kids each had a friend sleepover on Friday night. While the boys opted for homemade French bread pizza, the girls requested homemade refried beans, chips, and spicy salsa for their dinner. If you have time to make homemade refried beans, do it. They are a million times better than canned beans and they are very economical and simple to make! This batch of refried beans was the best I have made so far, and we all loved them, even my son who isn’t a huge fan of Mexican food. I made these bean and cheese flautas for lunch the following day. I ended up cooking them in a skillet until they were nice and crisp. Cooking them with a bit of oil in a skillet is so much healthier than deep frying flautas and much quicker than baking them. I served these bean and cheese flautas topped with sour cream, diced tomatoes, cilantro, and homemade salsa. It was a quick and easy lunch that tasted fantastic and was a great way to use up the leftover beans.

How to Make Homemade Refried Bean and Cheese Flautas
Make the homemade refried beans. Side Note: They are best simmered all day long.
Heat the oil in a large skillet over medium heat.
Spoon a small amount of refried beans down the center of each tortilla. Top with some shredded cheese. Roll tightly and place seam side down in the hot skillet; repeat with remaining tortillas, beans, and cheese. Side Note: Use a small amount of beans in each flauta or they will bake out and make a huge mess.
Once all of the flautas are in the pan, gently roll them with tongs until all sides of the flautas are coated with a bit of oil. Return the flautas to seam side down in the pan. Cook for a couple of minutes, until golden brown. Flip the flautas over and cook another couple of minutes until golden brown. Flip the flautas to the two other remaining sides, until they are golden brown. Remove from the skillet and place on a serving plate. Serve topped with sour cream, diced tomatoes, fresh cilantro, and salsa on the side. Enjoy!

Refried beans are one of my favorite pantry staples because you can do so much with them! I’m ashamed to say, I’ve never made them myself….but that stops now!
flautas are fun and tasty! i think it’s probably best to make refried beans at home because i’m still not sure what’s actually in those cans…
