Roasted Grape and Brie Crostini
Oh, this recipe for roasted grape and brie crostini is a keeper! My husband was recently on a business trip in China for two weeks, so my kids and I kept it simple while he was away and enjoyed light meals. One afternoon, I made this roasted grape and brie crostini for us and we all thought it was amazing. I originally planned on drizzling honey on top of the crostini but didn’t end up adding it because the roasted grapes were SO sweet. The crispy crostini paired beautifully with the creamy cheese and the sweet grapes and we all loved it, especially my son.
Roasted Grape and Brie Crostini
Ingredients:
- 1½ cups purple grapes
- 2 tsp olive oil
- Sea salt, to taste
- 1 sprig of fresh thyme
- 1 small baguette, sliced thinly
- Honey, if needed
How to Make Roasted Grape and Brie Crostini
Preheat the oven to 400 degrees. Place the grapes on a baking tray then drizzle with olive oil and season with a bit of sea salt, to taste. Toss a sprig of thyme on top.
Place into the oven and roast for 15-20 minutes, or until tender and slightly wrinkled, remove from the oven and set aside.
While the grapes are roasting, place the baguette slices on another baking sheet. Place into the oven on another rack and bake, about 10 minutes or until golden brown and crisp, flipping halfway through baking.
Place the crostini on a serving tray then add a slice of brie to each piece. Top with a spoonful or two of grapes and drizzle with honey, if desired. Side Note: Taste the grapes first because you may not need any honey!
