Black Bean, Green Chile, and Sharp Cheddar Baked Flautas

I was going to make baked chicken flautas, but I didn’t want to run to the store for chicken, so I decided to make black bean, green chile, and sharp cheddar baked flautas instead.  These vegetarian flautas were extremely easy to make and tasted fantastic dipped in guacamole, salsa, cilantro & lime sour cream. These baked flautas paired nicely with a Mexican wedge salad and cilantro & lime rice.

Black Bean, Green Chile, and Sharp Cheddar Baked Flautas

Ingredients:

  • 1 small can of whole green chiles
  • 1 can of black beans, rinsed and drained
  • Sharp cheddar cheese, shredded
  • Small flour tortillas
  • Fresh cilantro, chopped

Serving:

How to Make Black Bean, Green Chile, and Sharp Cheddar Baked Flautas:

Preheat the oven to 350 degrees. Coat a baking sheet with olive oil cooking spray.

Place shredded cheese in the center of the tortilla, add some beans, half of the green chile, more cheese, and some chopped cilantro. Roll tightly and set seam side down on the baking sheet.

Once they are all rolled, spray the top of each flauta with olive oil cooking spray.

Bake for 10 minutes, then flip and bake for an additional 10 minutes, or until golden brown and crispy.

Serve immediately, along with guacamole, salsa, cilantro & lime sour cream, if desired. Enjoy.
