Roasted Tomato and Feta Cheese Mini Tarts

We had friends over to watch the Olympic Opening Ceremonies on Friday night, and served a smorgasbord-style dinner instead of a sit-down dinner. I made this easy roasted tomato and feta cheese mini tarts recipe, which turned out to be a hit with adults and kids alike! I loved the salty cheese, sweet tomato, tangy balsamic vinegar, and the flaky phyllo tart shell. This easy appetizer will be one I serve again!

Roasted Tomato and Feta Cheese Mini Tarts

Ingredients:

  • 1 tbsp olive oil
  • 15 cherry tomatoes
  • Dried basil, to taste
  • Sea salt and freshly cracked black pepper, to taste
  • 1-2 tbsp balsamic vinegar, to taste
  • 15 mini phyllo shells
  • Feta cheese, crumbles, to taste

How to Make Roasted Tomato and Feta Cheese Mini Tarts:

Preheat the oven to 350 degrees.

Place the tomatoes and olive oil in a large baking dish, season with dried basil, sea salt, and freshly cracked pepper to taste, then toss to coat.

Place into the oven and roast for 15-20 minutes.

Remove from the oven, drizzle with the balsamic vinegar, and gently shake to coat. Set aside to cool.

Meanwhile, place the phyllo cups on a baking sheet.

Add a heaping teaspoon of feta cheese into each phyllo cup, then place in the oven and bake for 5-6 minutes.

Remove the cups from the oven and place a tomato in each phyllo cup.

Drizzle the remaining balsamic vinegar (from the bottom of the baking dish) over each tomato, if desired.

Serve immediately. Enjoy.

  1. I love that you and your friends gathered for the opening ceremonies and served fun appetizers. These just made my stomach rumble they look so good. Actually as far as I'm concerned anything in a phyllo shell has to be delicious.

  11. I love appetizers and cherry tomatoes are my favorite, they get even sweeter…..I also love the asparagus wrapped with prosciutto, it's great on top of a salad. My mouth is watering!
