Autumn Salad with Apples, Toasted Pecans, and Gorgonzola
Sometimes I forget just how good food is when made with simple ingredients. This salad is a perfect example. Mixed greens, toasted pecans, crisp & sweet apple slices, and gorgonzola cheese tossed with a tangy vinaigrette. Simple. Easy. Delicious. My son and I especially loved this salad and my husband and daughter thought it was great but neither cared too much for the gorgonzola cheese.

Toast the pecans. Place the nuts in a dry skillet over low heat and toss every few minutes until lightly browned and toasted. Be careful not to burn them.
Place the mixed greens in a large bowl. Top with toasted pecans, apple matchsticks, and gorgonzola crumbles. Drizzle some of the vinaigrette on the salad, to taste. Toss to coat evenly then serve immediately. Enjoy.
