Greek Nachos
My new favorite lunch is Greek nachos. Seriously… I loved it so much I may make it again for dinner. I grabbed a tortilla, hummus, pepperoncini, roasted bell pepper, tomato, red onion, kalamata olives, and feta cheese out of the refrigerator. I cooked the tortilla in a dry skillet for a few minutes on each side until it was crispy. I spread hummus all over the tortilla then topped it with all of the ingredients and placed it back into the skillet to heat through. These Greek nachos took less than 10 to make and it was so delicious. If you like Greek flavors – try this recipe!
How to Make Greek Nachos
Heat a skillet over medium heat. Add a flour tortilla and cook for 2-3 minutes per side until crisp and golden.
Remove the tortilla from the skillet then spread the hummus over it. Top the tortilla and hummus with pepperoncini, roasted bell pepper, tomato, red onion, kalamata olives, and feta cheese. Place the tortilla back into the skillet for 1-2 minutes to heat through. Slice into wedges with a large knife. Serve immediately. Enjoy.

Great idea to make nachos this way. I love anything with Greek flavors.

One of our favorite pizzas is a Greek flavored deep dish that we made so Greek nachos sounds wonderful to me! Looks good . If I fold it in half to make a quesadillla does that cut the calories in half? Ha ha

Looks delicious… but what’s the sodium in this recipe with the Feta? Have anyone tried/found a reduced sodium Feta Cheese ever? What are your thoughts?
